The beer is heavily Dry Hopped with 10g/L for amazing aroma. Then the beer should be fermented for 2 weeks, then it is bottled and bottle primed for another 2 weeks. A total of 4 weeks, then the beer is ready to be enjoyed!

New Zealand hops with a fresh aroma with hints of lemon peel and spruce shoots. Southern Cross was produced by New Zealand's HortResearch hops development program in 1994. This hop variety has a unique raisin-type character, a slight floral note and has been likened to giving a Styrian style flavour to the beer. A high alpha variety with a good aroma. The bitterness is soft, thanks to the low cohumulone content. In late additions, Rakau gives aromas of tropical fruit, such as peach and passion fruit.
