Magnum is a great bittering hop with an aroma similar to a strong Willamette. It therefore works well with Willamette, Fuggles, and British Kent Goldings when used as an aroma hop in later boil additions. Target, or Wye Target, is a relatively recent high-alpha variety, with good aromatic properties. Willamette is one of the most popular hops amongst all types of brewers for its versatility and well-rounded aroma. Potassium Chloride (KCl) is a food grade salt. Used for water treatment in beer brewing to obtain the desired amount of potassium and chloride. Potassium chloride gives the beer a fuller character that emphasizes maltiness. Can also be used in cooking and in dishes to replace or complement regular table salt, i.e. Sodium Chloride (NaCl). Normally 50% of the table salt can be replaced. Exists naturally as mineral. E-number: E 508. Ella™ hops, formally known as Stella, is an Australian aroma variety. It is half-sister to Galaxy® and the progeny of Spalt and a tetraploid female and was developed in the state of Victoria in the early 2000’s. By 2007, Ella™ was ready for release in brewing trials. An immediate hit, the variety was fast-tracked into commercial production.Due to its high level of oils, Ella™ can significantly change character depending on how it is utilized. When used in low quantities, it displays a spicy, floral character like star anise. The clean, distinct, pinapple, fruit and pine characters of Vic Secret are best accessed by dry hopping or whirlpool additions. Late kettle additions have been found to impart a pleasant earthy character, but little fruit. A relative to the Goldings variety but with a more powerful hoppyness in it's character. The aroma of this hop is described as “bold” as it delivers a herbal infusion of fresh citrus and crushed black pepper. Brewing trials have illustrated Pacific Jade as an excellent hop that delivers a pleasing soft bitterness matched to desirable aroma characteristics.Brewer’s notes: Suited for use as a bittering hop with some excellent results also being seen in dual purpose applications, with a soft bitterness attributable to the low cohumulone. Loral, formerly known as HBC 291, provides a more traditional yet unique hop character, providing the floral and herbal notes one would expect from a fine noble aroma hop.The aroma profile of Loral has been described as a “super noble hop” with its wonderful floral and herbal notes followed by a backdrop of citrus and earthy character. A touch of sweet fruity aroma rounds out this well-balanced hop. In beer, the floral notes are accentuated yet complemented nicely by fruity and citrus with just a hint of herbal.
